🍑Ingredients for Peach Overnight Oats
- Medium-sized peach: Make sure you use ripe peaches. Check for these signs: it’s soft to the touch, not overly mushy, fragrant, and vibrant on the outside (not green). Wrinkling around the stem means it is slightly overripe. If you can’t get fresh peaches you can use frozen. I recommend defrosting and draining excess liquid so it doesn’t make your overnight oats too watery.
- Old-fashioned oats (aka rolled oats): they create best chewy texture for these overnight oats but you can consider using quick oats or steel cut oats for different texture. Steel cut oats will need to set for at least 8 hours to have a soft texture. Check out my banana oatmeal muffins for another great recipe with oats!
- Plant milk of your choice: Such as oat milk, soy milk, or almond milk. If you like sweetener oats, use a sweetened milk. If it has vanilla added, consider omitting the vanilla extract in the recipe.
- Pumpkin pie spice (a mixture of cinnamon, nutmeg, ginger, cloves, and allspice): adds so much warm flavor to this recipe! It’s a myth that pumpkin pie spice is just for pumpkin pie. It rounds out the sweet flavors of the peaches perfectly! You can make your own pumpkin spice! Check out this pumpkin spice recipe. If you don’t have pumpkin pie spice, consider substituting with cinnamon and nutmeg.
- Pure maple syrup: adds a little sweetness which pairs perfectly with the warm spice flavors
- Ground flaxseed: Adds a thicker consistency
- Finish off your oats with chopped pecans (if desired) to make it just like a peach cobbler or crisp dessert!

Switch it up with different flavors in these peach overnight oats!
- Protein: Get some extra protein in your morning breakfast by adding a small scoop of vanilla protein powder.
- Nut butter: A dollop of creamy peanut butter or cashew butter with thicken these oats (and even gives it some additional protein).
- Yogurt: Add some plant-based yogurt (like almond or coconut yogurt) for more creaminess.
- Other fun flavors: Take the basic recipe and transform into fun new flavors: Peaches & Cream (add layers of vanilla yogurt), Peach Pie (add graham crackers on top), Peach Crumble (add granola on top).
- Make your own homemade peach preserves for these delicious oats! Just decrease the amount of sweetener you add since the preserves will have some sweetness.
- Transform this into a dessert by topping it with a warm nectarine compote and ice cream- YUM!
How to Make Peach Overnight Oats
Step 1: In a medium-sized bowl or in your mason jar, mix together all your ingredients: old-fashioned oats, pure maple syrup, ground flaxseed, pumpkin pie spice, pinch of salt, vanilla extract, HALF of your diced peach, and plant milk.
Step 2: Top your overnight oats with remaining diced peach (or add more right before eating). Cover and set in the fridge for at least 4 hours or overnight.
Step 3: After your peach overnight oats have set, you can top with chopped pecans if desired. Enjoy!
How to Store Peach Overnight Oats
You can premake these peach overnight oats 3-4 days in advance. Store in an airtight container (like a mason jar). If they get too thick after multiple days in the fridge add in a splash of plant milk.
Can I use canned peaches in overnight oats?
Yes, you can use canned peaches for these overnight oats, but they are a bit sweeter than a fresh peach because they are often coated in syrup. Consider adjusting the maple syrup for your desired sweetness level.
What can I use instead of pumpkin pie spice?
I recommend using 1/4 tsp cinnamon and 1/4 tsp nutmeg (if possible). You can use just cinnamon but pumpkin pie spice adds a greater depth of flavor and mimics a dessert.
Do I have to wait overnight to eat peach overnight oats?
No, you can let it sit for 3-4 hours in the fridge and it was start to get creamier. It is better if it sits overnight, though.
Can I use other fruit?
Yes, you could try nectarines, plums, pears, apples, and more! You could even make it with berries for a berry “crisp” or “cobbler.
Can I eat overnight oats hot?
You definitely can, but I personally think these peach overnight oats taste best chilled, especially in the summertime. But if you’re craving a warm and cozy breakfast, just pop the peach overnights oats in your microwave, warming for 30 second increments until the oats are warm throughout.

Peach Cobbler Overnight Oats

Ingredients
- 1 medium peach diced
- 1/2 cup old-fashioned oats
- 3/4 cup non-dairy milk oat, almond, or soy (sweetened if you like it sweeter)
- 1-2 Tbsp pure maple syrup add 2 Tbsp if you like it sweeter
- 1/2 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1 tbsp ground flaxseed
- pinch salt
- chopped pecans (optional) for topping
Instructions
- In a mason jar, combine oats, milk, maple syrup, vanilla, spice, ground flaxseed, and a pinch of salt. Mix well and add half of your diced peaches, adding the remaining on top or add them right before serving.
- Cover and allow to rest in the fridge for 4 hours or overnight.
- Top with pecans if desired. Enjoy!
Notes
- If you make a large batch of these peach overnight oats for meal prep, add a little extra milk (~1/4 cup) so that it remains creamy as it settles in the fridge longer.
- For an extra “dessert-like” breakfast, sprinkle with a little bit of brown sugar.
- Try out a Peaches & Cream flavor by adding in a layer of vanilla plant-based yogurt in your oats (or on top!)

Can you use water instead of milk or a milk alternative?
Hi Cricket, It probably won’t be as creamy but it might still work! You may want to add in some yogurt or more sweetener to your taste if you are not using any milk.
