Strawberries and Cream Overnight Oats (Vegan)

I remember as a kid going to the strawberry patch with my mom during strawberry season to pick hundreds of strawberries for jam, pies, strawberry shortcake and more. Sadly I have not done this for many years, but I’m still a strawberry lover and love to make fun recipes with this delicious fruit! These strawberries and cream overnight oats are a great way to use your summer strawberries for a quick breakfast the next morning with only 5 minutes of prep time.

Ingredients:

  • Old fashioned oats: These create the best texture for overnight oats, in my opinion. You could also use quick oats too for a softer texture. You can also use steel-cut oats but they require a longer soaking time (usually 8+ hours at least)
  • Plant milk: My favorite dairy-free milk for overnight oats is soy milk or oat milk. They create the creamiest texture. For sweeter oats, use a sweetened plant milk. 
  • Plant-based Greek Yogurt: The “cream” in our strawberries and cream overnight oats. You can find vegan Greek Yogurt at a lot of grocery store now. Most are sweetened with vanilla which adds more flavor to our oats!  If you want it EVEN creamier, use some coconut milk (from the can)
  • Pure Maple syrup: To add just a touch of sweetness to our oats. (This is optional but recommended) 
  • Strawberries: Wash your strawberries before cutting them into small slices. 
  • Chia seeds: Not only are they nutritious, chia seeds create a creamier “pudding” texture as they rest. 

Substitutions & Variations

The beauty of overnight oats is they are easily customizable!

  • Add extra protein with some protein powder (such as vanilla flavor)
  • Add other toppings or mixings such as hemp seeds, ground flaxseed, nuts and more. Add chocolate chips for a great complimentary flavor to strawberries. One of my favorite toppings for overnight oats is a large dollop of peanut butter!
  • For an even creamier texture add in an extra dollop of yogurt.

  • Mason jars or a glass jar 

Instructions:

Overnight oats are so easy to whip up in 5 minutes!

Step 1: In a glass jar or cup, add in old fashioned oats, plant-based milk, yogurt, maple syrup, and chia seeds. Give it a good stir.

Step 2: Mix in your diced strawberries to the oat mixture.

Step 3: Cover and let sit for at least 4 hours or overnight.  If they are still a little chewy after 4 hours, let them set for longer. The longer they sit, the creamier they get!

Storage

Store in an airtight container for up to 4 days. You can freeze overnight oats too! Just let them thaw in the fridge for 24 hours before eating.

Can I use frozen strawberries?

Yes, you can substitute with frozen strawberries but I recommend defrosting and draining them before adding to your overnight oats (or else they will become soggy).

Can I heat up the overnight oats in the morning?

Yes, if you prefer warm oats, you can heat them in the microwave or on the stovetop. Just be aware that the texture may change slightly, becoming softer and creamier.

Can I make a larger batch of overnight oats?

Absolutely! You can easily scale up the recipe to make a larger batch. I recommend adding an extra 1-2 tbsp of milk to the batch.

  • Sweeten it up: If you like your oats on the sweeter side, add more natural sweetener such maple syrup or agave nectar. Alternatively, you can use a sugar substitute or mashed banana for a healthier option.
  • Add extra toppings: Consider adding sliced almonds, hemp seeds, flaxseeds, or shredded coconut for added crunch and nutrition.

    I never thought I’d enjoy oats this much until I tried these strawberries and cream overnight oats. It is so creamy with a burst of strawberry flavor that I loved. I topped mine with a dollop of yogurt and fresh blueberries making it a breakfast I’ll happily have again. Yum!
