Ingredient notes:

  • Oats: The best oats for overnight oats are old fashioned oats (rolled oats) as they produce the perfect chewy yet creamy texture.
  • Apple: Of course you need apple for apple pie overnight oats! The best apples for this are a crisp apple variety like Honeycrisp or Pink Lady- but choose whichever you prefer! The apple provides a lot of natural sweetness. (If you have extra apples try making these amazing Apple Crisp Bites!)
  • Non-dairy milk: I love soy milk in this recipe but you could also use oat milk or almond milk. If you like sweeter overnight oats use sweetened non-dairy milk. In this overnight oats recipe we use more milk to help create the creamiest texture and let the apple and cinnamon flavors infuse.
  • Pure maple syrup: If you don’t have this you can also substitute it with brown sugar.

📝Step-by-Step Instructions

Step 1: In a small bowl, add your chopped apples, ground cinnamon, nutmeg, and pinch of salt.

Microwave for ~ 2 minutes until apples are softened.

Step 2: In a medium-sized glass bowl or container, add the softened apples, old fashioned oats, pure maple syrup, vanilla extract, non-dairy milk, and chia seeds. Give it a good stir.

Cover it and place it in the fridge for at least 4 hours but ideally overnight (8+ hours) for the best texture and to let the apple cinnamon flavors infuse.

Step 3: The next morning, give the apple mixture a good stir and separate in half into mason jars. Feel free to add other toppings like granola, nut butter, nuts & seeds, yogurt, and more!

Tip: You can also warm overnight oats up in the microwave the next morning. Microwave for 30-45 seconds until warm and give it a good stir.

What kind of oats can I use for overnight oats?

The best oats for overnight oats are old fashioned (rolled oats) as they are flattened and partially cooked making them ideal for soaking overnight and becoming soft and creamy by morning. They also have a good texture after soaking, unlike instant oats, which can become mushy.
In general steel-cut oats aren’t the best for overnight oats, as they require extra longer soaking time.

Can I make overnight oats higher protein?

There are lots of ways to add extra protein to overnight oats. You can add Greek yogurt which is naturally high in protein and adds a creamy texture. You can also add a scoop of protein powder or nut butter (such as peanut butter or almond butter). Nuts and seeds are higher protein with lots of nutritional value as well.

Can I heat up overnight oats before eating?

While the beauty of overnight oats is their no-cook convenience, you can certainly warm them up in the microwave or on the stovetop if you prefer a warm breakfast. Just be sure to use a microwave-safe container and stir occasionally if heating on the stovetop.

Notes

⭐️The best apple for this recipe is a crisp apple like Honeycrisp or Pink Lady but you can use whatever you have on hand. Dice this up into small pieces.
⭐️This recipe calls for more liquid than most overnight oat recipes because it really helps for oats soften into a creamy, smooth texture. The apples will also release more of their juices and spices into the mixture with more liquid. 
Other tips:
  • Optional add-ins: Greek yogurt, protein powder, nut butter, nuts & seeds, other fruits
  • I recommend old-fashioned oats for this recipe for the best texture, but you could also consider trying it with quick oats.
