Apple Pie Baked Oatmeal

We’d all love to have some dessert for breakfast (remember begging for that as a kid?) and now you can with apple pie baked oatmeal! It’s filled with warm flavors like apple pie including juicy fresh apples, spices, and creamy oats.

The best way to use up your apples during that apple season! Fall is the best time of year for apple picking (if you live in that climate) and put those apples to good use! This is like healthy apple pie for breakfast and I know you will love it!

Ingredients

  • Old fashioned oats: These give the best chewy texture to baked oatmeal. You can also use quick oats too but they tend to cook faster and not need as much liquid (so adjust accordingly)
  • Apple: You can either use a Honeycrisp or Granny smith apples . They both create delicious apple pie baked oatmeal because they have a firm texture and low moisture content. They are both sweet and Granny smith has some additional tartness. (Do you have some extra apples? Try these amazing Apple Crisp Bites!)
  • Non-dairy milk: You can use oat milk, almond milk, or soy milk. I prefer a sweetened version in this recipe, but it’s not necessary
  • Maple syrup: This will give the oats some sweetness. Just a small drizzle of maple syrup with deepen the flavor!
  • Brown sugar: You don’t need a lot of brown sugar to add warm flavors of apple pie!
  • Vanilla extract: 1 teaspoon adds more flavor to these baked oats
  • Lemon juice: This compliments the sweet flavors of the apple pie flavor
  • Flax egg: This will help bind together your baked oats.
  • Baking powder: This will help the baked oats rise.
  • Pinch of salt

Substitutions/Variations

Don’t have an ingredient? Don’t worry!

  • Instead of a flax egg you can use a chia egg
  • Instead of brown sugar or maple syrup, you can use sweeteners of your choice (such as agave, honey (if not vegan), or coconut sugar). This may alter the flavor your baked oats.

Add different flavors!

  • Add some protein with vanilla protein powder
  • Add a scoop of chocolate chips for a chocolately flavor
  • Add peanut butter for extra flavor that pairs well with apples

Instructions

Step 1: Preheat oven to 375 F or 190 C. In a large bowl whisk together your dry ingredients: rolled oats, spices, baking powder, salt.

Step 2: In another bowl, combine wet ingredients including plant-based milk, maple syrup, flax egg, vanilla extract, and lemon juice.

Step 3: Add the wet ingredients to the dry and mix until well combined. Fold in the diced apples.

Step 4: Pour oat mixture into 8×8 glass pan. Bake for 40 minutes. The top should be golden brown.

Step 5: Let cool for 10 minutes before before cutting into 4 large squares. Top with yogurt, peanut butter, maple syrup, or whatever you like. Enjoy!

*You can also enjoy this as a dessert with a scoop of vanilla ice cream!

Storage

Store leftovers in an airtight container or in the original pan and cover with plastic wrap or aluminum foil.

Can I use a different type of fruit instead of apples in baked oats?

Yes, you can definitely use different types of fruit instead of apples in baked oats. You could try berries, peaches, pears, bananas, or a mixture of fruit.

Can I add nuts or seeds to apple pie baked oats?

Absolutely! Adding nuts or seeds to apple pie baked oats can provide additional texture, flavor, and nutritional value. This includes walnuts, pecans, almonds or pumpkin seeds.


Tips

  • My favorite apple for apple pie baked oats is Honeycrisp because it’s the perfect level of sweetness and crunchiness. You could also use a Granny Smith which gives a little sour flavor that compliments the sweetness well.
  • Add in nuts. You can top with some pecans or walnuts for a little crunch.
  • You could also enjoy this for dessert! Warm it up and put a large scoop of vanilla ice cream on top- yum!
  • Lining the baking pan is not necessary for making baked oats, but it can help with easy removal and cleanup.

Notes

Note 1: The best apples for this recipe are either Honeycrisp or Granny Smith because they have a firm texture, a good balance of sweetness, and lower moisture content. Granny Smith has a more tartness that pairs well with the sweet oatmeal.
