Ingredients

Ingredient notes:

  • 1 Large Russet Potato: I picked out the biggest russet potato I could find for this recipe. You could also use two medium size potatoes as well. A large russet potato usually weight ~1 lb. No need to remove the skin for this recipe.
  • Dill pickle juice: You will need 1.5 cups for this recipe, so choose a large sized pickle jar. Use your leftover pickles for this Dill Pickle Pasta Salad or Dill Pickle Hummus!
  • Dried dill: To get more of that dill flavor, we use dried dill in this recipe. You will need 2-3 tsp, depending on how “dill-forward” flavor you like it.

See recipe card for full ingredient list and quantities.

Substitutions & Variations

  • Pickle juice: Try out a different flavor pickle such as bread and butter or spicy pickles juice for a unique twist on the classic dill pickle flavor.
  • Dried dill: You can also use fresh dill. 1 tsp of dried dill = 1 tbsp fresh dill.

📝Step-by-Step Instructions

Step 1: Start by rinsing the outside of your potatoes. Carefully slice your potatoes into thin pieces (as thin as you can make them) with either a sharp knife or mandolin.

Step 2: In a large bowl pour pickle juice over sliced potatoes. Add in 2 tsp of dried dill. Gently mix until all pieces are coated.Allow to marinate for 1 hour (overnight if you can), flipping halfway through to ensure all potatoes get some marinade.

Step 3: Drain potatoes. Sprinkle another tsp of dried dill, garlic powder, and salt over the potato slices and gently toss until evenly coated.

Step 4: Preheat your air fryer for 2-3 minutes at 400F. Place potato slices evenly in the basket without overlap. Cook potato slices for 14-20 minutes, shaking halfway through, until browned and crispy to your liking.

*You may have to cook multiple batches depending on the size of your air fryer.

You can easily throw your chips back in the air fryer if you need to warm them back up and restore crispness.

Step 6: Enjoy with ranch dipping sauce or on their own.Store in an airtight container at room temperature for up to 3 days. If potatoes start to lose their crispiness, add them back to the air fryer for a few minutes.

Pro Tips for Crispy Chips

  • Slice the chips thinly and evenly: Cut your chips as thinly as possible (carefully). You can do this either with a sharp knife or mandolin. Try to make each cut equal to the rest, or else you will end up with some overcooked or undercooked chips.
  • Don’t overcrowd your air fryer: Try to arrange your potato slices with minimal overlap so they each get as crispy as possible.
  • Shake! You can shake your chips halfway through to prevent sticking and help each area get crispy.
