Ingredients

  • Half Medium-Sized Cucumber: You only need a half a regular cucumber for this recipe but feel free to use English cucumbers if you have them available at your store (they have fewer seeds that the basic cucumber). In this recipe we only use half the cucumber to make ~9 cucumber slices but feel free to make more.
  • Mediterranean Hummus: This flavor of hummus is available at most grocery stores and has hints of lemon, olive oil, paprika, and cumin. Using premade hummus makes for an easy recipe but feel free to make your own homemade hummus . If you are having a hard time finding Mediterranean hummus, use plain garlic hummus (or another flavor you like).
  • Cherry tomatoes: This type of tomato tastes the best on top of this bite but feel free to substitute with grape tomatoes if needed. Wash and cut your cherry tomatoes in half for this recipe
  • Feta cheese: If you are vegan/dairy-free, use vegan feta crumbles like those from Follow Your Heart. If you’re not, use whatever type of feta crumbles you enjoy.
  • Fresh parsley: Sprinkle your finished cucumber bites with some freshly diced parsley. It adds a vibrant color and flavor to these bites!
  • Optional: Add a sprinkle of freshly ground black pepper or red pepper flakes for a little kick

Substitutions

  • Mediterranean hummus: You can use any hummus flavor you like! Use a classic garlic hummus (and add in a squeeze of fresh lemon juice!), Everything Bagel Hummus, or for a really unique flavor try Dill Pickle Hummus.
  • Cherry tomatoes: You can use grape tomatoes or even a small piece of diced red pepper.
  • Parsley: You can use other types of herbs such as fresh dill or basil. If you want a little bite add a sprinkle of diced green onion or fresh chives.

Instructions

Follow these simple steps for these easy cucumber bites!

Wash and dry your cucumber. Slice your cucumber into half-inch slices. In this small batch recipe I used half the cucumber to create 9 slices of cucumber but you can create as many as you want.

Spread out your cucumber rounds on a plate and top each cucumber slice with some Mediterranean hummus (1-2 tsp). Top with half a cherry tomato, sprinkle of feta cheese, and diced parsley.

Enjoy right away or store in the fridge for 1-2 hours.
