Ingredients

  • Half Medium-Sized Cucumber: You only need a half a regular cucumber for this recipe but feel free to use English cucumbers if you have them available at your store (they have fewer seeds that the basic cucumber). In this recipe we only use half the cucumber to make ~9 cucumber slices but feel free to make more.
  • Mediterranean Hummus: This flavor of hummus is available at most grocery stores and has hints of lemon, olive oil, paprika, and cumin. Using premade hummus makes for an easy recipe but feel free to make your own homemade hummus . If you are having a hard time finding Mediterranean hummus, use plain garlic hummus (or another flavor you like).
  • Cherry tomatoes: This type of tomato tastes the best on top of this bite but feel free to substitute with grape tomatoes if needed. Wash and cut your cherry tomatoes in half for this recipe
  • Feta cheese: If you are vegan/dairy-free, use vegan feta crumbles like those from Follow Your Heart. If you’re not, use whatever type of feta crumbles you enjoy.
  • Fresh parsley: Sprinkle your finished cucumber bites with some freshly diced parsley. It adds a vibrant color and flavor to these bites!
  • Optional: Add a sprinkle of freshly ground black pepper or red pepper flakes for a little kick

If you have some extra cucumber, pair it with a refreshing drink like this cucumber basil mocktail!

Substitutions

  • Mediterranean hummus: You can use any hummus flavor you like! Use a classic garlic hummus (and add in a squeeze of fresh lemon juice!), Everything Bagel Hummus, or for a really unique flavor try Dill Pickle Hummus.
  • Cherry tomatoes: You can use grape tomatoes or even a small piece of diced red pepper.
  • Parsley: You can use other types of herbs such as fresh dill or basil. If you want a little bite add a sprinkle of diced green onion or fresh chives.

Instructions

Follow these simple steps for these easy cucumber bites!

Wash and dry your cucumber. Slice your cucumber into half-inch slices. In this small batch recipe I used half the cucumber to create 9 slices of cucumber but you can create as many as you want.

Spread out your cucumber rounds on a plate and top each cucumber slice with some Mediterranean hummus (1-2 tsp). Top with half a cherry tomato, sprinkle of feta cheese, and diced parsley.

Enjoy right away or store in the fridge for 1-2 hours.

Storage

Cucumber bites can be stored in an airtight container in the refrigerator for up to 2-3 days. However, it’s important to note that cucumbers have high water content, and they may become watery or lose their crispness over time.

I highly recommend making these bites right before eating.

FAQ

Can I make my own hummus for this recipe?

You can definitely make your own hummus for this recipe. Make a simple garlic hummus or a Mediterranean hummus or choose a unique flavor like my Everything Bagel Hummus.

Can I prep these ahead of time for a party?

You can, but I would only prep 1-2 hours in advance. Cucumbers have a high water content and will release their juice the longer they sit. These cucumber bites are super easy to prepare (<10 minutes) so they should be easy to assemble right before a party or gathering.

How do I prevent the cucumber bites from becoming watery?

Choose a firm, fresh cucumber (English cucumbers have lower water content). Slice your cucumber and pat dry each slice with some paper towel.
Bonus: Sprinkle a small amount of salt over the cucumber slices and let them sit for about 10-15 minutes (the salt helps draw out excess moisture). Afterward, rinse the cucumber slices and pat them dry before using.
I recommend assembling your cucumber bites close to serving time.

When to Enjoy Cucumber Bites

These easy Mediterranean cucumber bites are great for many occasions at any time of the year!

  • An easy after-school or work snack
  • A summer picnic or BBQ
  • Game day appetizer

Tips

  • Enjoy these bites right after you make them. After sitting for hours they start to lose some of their crunch/crispiness.
  • Press feta crumbles into the hummus with a spoon or your fingers- if you just sprinkle it it may not stick.
