Stuffed Portobello Mushrooms (Air Fryer)

These savory air fryer stuffed portobello mushrooms are filled with spinach and feta are simple dinner you can make in just 15 minutes. It will satisfy all mushroom lovers with golden brown, juicy mushrooms topped with a creamy feta, spinach, and onion filling.

Juicy, meaty, savory, and stuffed with a mouthwatering filling! These stuffed air fryer portobello mushrooms are one of my favorite easy recipes for the weeknight. The creamy feta with the savory onion and spinach is a to-die-for filling you could eat by the spoonful.

Luckily you only need a few simple ingredients to make this savory dinner.

Ingredients

  • Large portobello mushrooms: Usually these come in packs of two at the grocery store (perfect for this recipe!)
  • Olive oil: This will add extra flavor to your filling.
  • Garlic cloves: Sautéd with onion, olive oil, fresh, and fresh spinach to enhance the flavor.
  • White onion: A small white onion, diced, adds more flavor to the filling.
  • Fresh Spinach: Add some greens to your meal with fresh spinach. You can use frozen- just make sure it is defrosted.
  • Vegan Feta: This adds a lot of creaminess to the filling. I love Follow Your Heart or Violife.
  • Fresh Thyme: This herb pairs perfectly with the portobello mushroom
  • Salt and Pepper: Add more to taste based on personal preference

Substitutions & Variations

Don’t have a certain ingredient? No worries!

  • Use garlic powder (1/8 tsp per 1 clove) if you don’t have fresh garlic.
  • Use avocado oil instead of olive oil.
  • If you don’t have feta, try out another cheese like mozzarella.

There’s many different ways you can enjoy air fryer portobello mushrooms!

  • Add in sliced artichokes, sun dried tomatoes, and/or kalamata olives.
  • Try some different herbs such as parsley, oregano, or rosemary.
  • Sprinkle with parmesan cheese for more cheesy flavor!

Step 1: Start by heating 1 tbsp of olive oil in a large fry pan over medium heat. Add in diced onion and garlic cloves. Cook for ~3 minutes until onion is translucent.

Step 2: Next add in fresh spinach, thyme leaves, salt, and pepper. Stir and cook down for 1-2 minutes until wilted.

Step 3: Take pan off the heat and add in feta. Stir until combined.

Step 4: Remove the stem of the mushroom. Place stem side up and fill the mushroom with the spinach, feta, onion filling. Add mushrooms in a single layer in the air fryer basket. If your air fryer cannot fit the second mushroom cook a second batch (overcrowding the basket will not allow the hot air to evenly cook the mushroom). Cook for 10 minutes at 400 degrees F. Sprinkle cooked mushrooms with more feta if desired.

Hint: If you have spray oil, consider spraying the sides of the mushrooms before cooking to help it get crispier.

Storage

When storing mushrooms, drain away their juice and store in an airtight container. Excess moisture could create a soggy leftover mushroom. Save the juice for rice, polenta, risotto, soup, and more!

Store leftover stuffed portobello mushrooms in an airtight container for 3-4 days. Reheat in the microwave for 30-45 seconds or in oven at 400F for 5-7 minutes.

I do not recommend freezing leftover mushrooms.

    Have had portabella mushroom burgers out at restaurants before but never tried to make it myself. Gave it a go last night with your recipe and it came out amazing! Loved the addition of stuffing it with spinach and feta… So tasty. Thanks!
