These strawberry frozen yogurt bars are an easy healthy breakfast that’s perfect for on-the-go! A creamy strawberry yogurt topping is layered over a peanut butter granola base for a delicious breakfast or snack bar.

Remember going to get Froyo as a kid? I loved to go with my cousins to Red Mango, trying 10 different flavors, and piling on a mountain of toppings (mostly peanut butter cups). These frozen yogurt bars are a healthier version of our childhood treat. They are the perfect for make ahead breakfast to enjoy in the morning. Just let them thaw for a few minutes and enjoy! They are also great as a snack too, especially in the summer months.

Not to mention this is also a cute Valentine’s Day treat to make for the one you love!

Ingredients:

  • Almond yogurt: Unsweetened plain non-dairy yogurt is perfect for this recipe. Feel free to swap out for a different yogurt such as soy or almond.

FAQ Frozen Yogurt Bars

They are a healthy breakfast option with plant-based probiotic yogurt that’s higher in protein. Strawberries are packed with vitamins and antioxidants. The granola base filled with healthy fats and fiber to keep you full longer.

In these frozen yogurt bars we are using a non-dairy, unsweetened yogurt. A lot of sweetened yogurts contain high amounts of sugar, so I recommend unsweetened for a healthier option. The strawberries will add a natural sweetness as well.

I recommend using a non-dairy yogurt that has probiotics (active live cultures). Check the label on the back.

In this recipe I use almond milk yogurt for it’s creamy texture. You could also try soy, coconut, or cashew. Each yogurt may give you a slightly different texture and taste.

They need at least 2 hours to freeze before ready to eat!

When to eat frozen yogurt bars:

  • Breakfast: They are great in the morning or for an on-the-go breakfast.
  • Snack: A healthy delicious snack that will fill you up!
  • Dessert: These also make for a delicious healthy dessert.

How to make frozen yogurt bars

1. Start by making your peanut butter granola base. Mix together oats, peanut butter, maple syrup, vanilla, coconut oil, and a little salt.

2. In a parchment lined 8×8 pan, press and even layer of the granola mixture over the bottom with a spoon.

3. In your high speed blender mix together your strawberries and yogurt until well combined.

4. Pour strawberry mixture over granola evenly.

5. Optional: Melt a few frozen strawberries and use the strawberry juice to create swirls in the yogurt bars. Using a spoon pour a small dime-sized amount of strawberry juice scattered across the bars. With a fork or toothpick, drag the dot until a swirl forms.

6. Top with thin slices of strawberries. (Optional : cut your strawberries in a heart shaped for a beautiful dessert that’s also festive for Valentine’s Day!)

7. Freeze for 2 hours before cutting into bars.

How to cut your strawberries in heart shapes

  1. Start by removing the green leaves from your cleaned strawberry (don’t cut, just pluck it off).
  2. Cut your strawberry in half lengthwise.
  3. Lay your strawberry half face down and with a paring knife carve a V shape into the strawberry.
  4. Slice up the half into thin pieces and to create a few hearts.
  5. Repeat with the other strawberry half.

  • Freeze bars for 2 hours.
  • Cut into squares and store in a container in the freezer with parchment between bars.
  • When ready to eat, remove from freezer and let thaw for 4-5 minutes before eating.

Notes

Storage:
    • Store in the freezer in a container with parchment between the bars for up to 3 months. When ready to eat, let the bar thaw on the counter for 4-5 minutes before eating
PRO TIPS
    • Use parchment paper to prevent your bars from sticking to the pan.
    • If you like sweeter bars, use a sweetened yogurt with vanilla.
    • You will need a sharp knife to cut your bars when they are right out of the freezer. If they are too hard, let them sit for a few minutes to thaw before cutting.
