Vegan Gyro Sliders with Tzatziki
Calling all gyro AND burger lovers! These vegan sliders are the perfect appetizer, snack, or entree for your summertime party (or ANYTIME!) The juicy vegan meat pairs perfectly with creamy fresh tzatziki, crumbled feta, and vibrant red onion. You won’t be able to have just one of these mouthwatering sliders!
I’m in LOVE with these vegan gyro sliders. These are Greek-inspired mini burgers with a delish tzatziki and feta crumbles sprinkled on top. Of course we can’t imitate lamb meat perfectly, but using plant-based ground we are able to create a mouthwatering slider that’s perfect for your summer parties!
Ingredients
- Vegan plant-based ground – You will need 1lb of plant-based ground beef. This is found often in the fridge or freezer section of the grocery store. Do not get the plant-based crumbles (such as this). I love Beyond Meat’s Plant-Based Ground.
- Spices – You will want to flavor your vegan ground beef with some salt, oregano, minced garlic, pepper, and minced red onion to give your burgers a rich flavor. (You can also use garlic powder if you don’t have fresh garlic)
- Toppings – For a “gyro-inspired” burger you will need a vegan tzatziki (I often get mine store bought from Trader Joe’s), vegan feta (I love Follow Your Heart vegan feta), and red pepper slices.
- Slider buns – This recipe makes 6 sliders! You could also use dinner rolls for the buns.

How to Make Vegan Sliders
Make your slider patties
In a large mixing bowl, combine you the plant–based ground with all the other burger ingredients. Use your hands or a spoon to fully incorporate.
Form 6 patties (~2.5 inches wide). Flatten slightly and place on a plate to sit for 10-15 minutes before cooking.
Cook vegan sliders
Warm a large skillet over medium heat with a little bit of olive oil to coat the bottom of the pan. Once the pan is warm, add your slider patties.
Cook for 3-5 minutes per side, until crisp and golden brown. Cover your sliders for at least 2-3 minutes during the cooking process to help the inside cook through.
Assemble
Assemble your slider. Place the cooked vegan meat on the bottom and top with a slice of red onion. On the top of the rolls or bun, add your vegan tzatziki with a sprinkle of feta crumbles.
Enjoy your vegan gyro sliders right away!
You can serve individual sliders on plates or just one large platter.
Storage Recommendations
If you (somehow!) have leftovers, you can store individual burger patties in an airtight container in the fridge for up to 3 days. I don’t recommend storing assembled sliders because they will get soggy.
The plant-based ground is freezer friendly and patties can be frozen for up to 2 months (pre-cooked or cooked) in a tight container.

How do I know when the “meat” is cooked through?
Like animal-based meats, plant-based meat will often change color and texture as they cook. Beyond Meat will darken as it cooks. I recommend breaking off a small piece of one slider to check if it is cooked on the inside.
Tips to get the vegan sliders to cook evenly –
- Cover your pan for 2-3 minutes as they are cooking to help the inside cook.
- If your heat is not evenly distributed in your pan, make sure to move the sliders around so they all get equal time on the high heat.
- You can use an internal thermometer to make sure your plant-based ground is reaching the optimal temperature. Check the package for confirmation of ideal temperature.
Can I make these sliders ahead of time?
I recommend cooking the vegan meat right before eating for best flavor and consistency. You can assemble the patties the night before and keep stored in an airtight container until ready to eat.

- Vegan plant-based ground is NOT the same as beefless crumbles. Plant-based ground comes in a vacuum-sealed block (often in freezer section). I like Beyond Meat the best (see the one I use here) but you can use any kind you like or have available!
- Defrost your plant-based ground the night before in the fridge to save time. You could even make your patties the night before and store in the fridge in an airtight container until ready to cook.
