How to make Salted Caramel Energy Bites

  1. In a food processor, start by pulsing your oats until they have a fine texture. They don’t need to be a flour, but should be mostly ground.

2. Next, add in your dates, cashews, salt, and hemp seeds. Blend on high for approximately 1 minute until dough is soft and sticky. If the mixture doesn’t stick together when pressed between your hands, add in another date or two and mix until well combined.

3. Use an ice cream scoop to form balls and roll between your hands. The warmth of your hands also helps the dough come together.

4. Enjoy right away or store in the fridge.

Ingredients
  

  • 1 cup medjool dates ~ 10 dates, pitted
  • 1/2 cup raw cashews or roasted unsalted
  • 1/3 cup old fashioned oats
  • 2 tbsp hemp seeds optional
  • 1/2 tsp salt

Instructions
 

  • In a food processor, start by pulsing your oats until they have a fine texture. It should not be a flour, but should be mostly ground.
  • Add in your dates, cashews, salt, and hemp seeds. Blend on high for approximately 1 minute until dough is soft and sticky. If the mixture doesn’t stick together when pressed between your hands, add in another date or two and mix until well combined.
  • Use an ice cream scoop to form ~ 1 inch balls. Roll between your hands. The warmth of your hands also helps the dough come together.
  • Enjoy right away or store in the fridge for up to 5 days.

Notes

If your medjool dates are hard and dry, soak them in warm water for 20 minutes then drain. The warm water can restore some of the natural softness to them.
 
Don’t have raw cashews? Swap it out roasted unsalted cashews for a similar flavor. 
 
Storage: Store in the fridge for up to 5 days in an air tight container.
