No-Bake Brownie Bites

These easy no-bake brownie bites are a healthy snack or dessert you can make in less than 10 minutes! They are made with plant-based ingredients and no refined sugar. Curb your sweet cravings with these mini bites!

These vegan no bake brownie bites are one of my favorite snacks! If you love brownies like me then you will love these brownie balls that make for a great afternoon snack. This delicious recipe is so easy to make in just 10 minutes!

Ingredients

  • Medjool dates: Make sure to get pitted medjool dates for this recipe. They are different from regular dried dates in that medjool dates have a rich, caramel-like flavor with a slight hint of butterscotch while regular dates are generally milder and less sweet.
  • Walnuts: Make sure to get raw walnuts, not roasted, for this recipe.
  • Almonds: Just like the walnuts, we will use raw almonds for this recipe.
  • Cocoa Powder: Sift your cocoa powder so there are no lumps. This will add the chocolate flavor!
  • Vanilla Extract: Adds a hint of vanilla flavor to the brownie
  • Sea salt: Just a pinch balances the flavor of the sweetness

Equipment

Instructions

In a food processor combine walnuts and almonds. Blend until they are ground into fine pieces but don’t careful to not blend too much or you will have a nut butter.

Add in dates, cocoa powder, and salt and blend until combined.

Use an ice cream scooper or small cookie scoop to form into 1-inch balls. Roll in the palms of your hand to create small balls. These little bites are ready to eat right away!

Variations

You can create different flavors for these no-bake brownie bites

  • Add a small amount of nut butter of choice such as creamy peanut butter or almond butter.
  • Drizzle the top of the balls with melted chocolate (like dark chocolate)
  • Fold in some mini chocolate chips for a crunch
  • Add in half a scoop of protein powder for more protein.

FYI: You may need to adjust the nut:date ratio if adding in other flavors to obtain the proper texture.

Storage

Store your leftover no-bake brownie bites in an airtight container at room temperature for up to 5 days.

FAQ

Can I use a blender instead of a food processor?

I do not recommend a blender to make these bites. A blender is too tall and will not evenly blend all the ingredients.

Why are my bites dry and not sticking together?

Your medjool dates may be a little old and dry. Ideal medjool dates should be soft and sticky, not shriveled, wrinkled, or dry.
To your mixture, add 1 tsp of water at a time until your balls start to stick together.
Next time, rehydrate your dried dates by soaking them in water for 5 minutes then patting dry.

Can I freeze these bites?

Yes, these are great for freezing. Place in a freezer safe container for up to 3 months. Let thaw on the counter for an hour before eating.

    1. Hi Rosemary, You are right, these are higher in sugar because of the medjool dates. The good news is that medjool dates are all natural sugar and packed with fiber – which slows blood sugar spikes in your body (so it’s better than using white sugar or brown sugar). However, I understand your concern about wanting to reduce sugar overall. The dates in this recipe provide sweetness and are a binder. You could consider reducing the dates (maybe reduce to 8-9 dates) and add in some peanut butter or other nut butter to act as a binder. I have not tried this, but it may work – and still taste good!     OMG! These are fantastic made exactly per the recipe! They’re such a perfectly healthy little bite of dessert that tastes just like a brownie!! We have a friend who is diabetic and at Christmas we always serve some sort of dessert containing Medjool dates and these will be a great addition. Not too mention they are so darned easy:) Thank you for this one!
