No-Bake Brownie Bites
These easy no-bake brownie bites are chewy and soft, like a delicious brownie, but healthy!

- 1/2 cup raw almonds
- 3/4 cup raw walnuts
- 12 pitted medjool dates
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 1 tsp vanilla extract
In a food processor combine walnuts and almonds. Blend until they are ground into fine pieces but don't careful to not blend too much or you will have a nut butter.
Add in dates, cocoa powder, vanilla extract and salt and blend until combined.
Use a small spoon or an ice cream scooper to form into 1-inch balls. Roll in the palms of your hand to create small balls. They are ready to eat right away!

- Process your nuts until finely ground (unless you want to have a crunch in your brownie bite). Don't use frozen nuts.

- If your dates are older and dry, soak them in warm water for 5 minutes then pat dry.
FAQ:
Can I use a blender instead of a food processor?
I do not recommend a blender to make these bites. A blender is too tall and will not evenly blend all the ingredients.
My bites are dry and not sticking together. What can I do?
Your medjool dates may be a little old and dry. Ideal medjool dates should be soft and sticky, not shriveled, wrinkled, or dry.
To your mixture, add 1 tsp of water at a time until your balls start to stick together.
Next time, rehydrate your dried dates by soaking them in water for 5 minutes then patting dry.
Can I freeze these bites?
Yes, these are great for freezing. Place in a freezer safe container for up to 3 months. Let thaw on the counter for an hour before eating.
