Crispy Ranch Potatoes

I have been in love with these crispy ranch potatoes! The red potatoes are drizzled with a ranch flavored butter and you won’t be able to stop eating these- they’re that good! Dill, herbs, garlic, and onion are used to create a delicious ranch flavor. Top with fresh parsley and dip in your favorite vegan ranch for even more ranch flavor!

Ingredients:

  • Red Potatoes: I love baby red potatoes. They have a beautiful color and a rich flavor that is perfect for these crispy ranch potatoes.
  • Spices: Garlic Powder, Onion Powder, Dill, Herbs de Provence, Salt and Pepper (You can also use fresh dill if you have that on hand. It will make the flavor even better!)
  • Vegan Butter: This really helps these potatoes crisp up nicely!
  • Optional: Fresh Parsley and Vegan ranch for dipping (I love the Follow Your Heart Vegan Ranch)

Other Tips:

  • Cook your potatoes on the top rack to help with crispiness.
  • Allow to cool for 5-10 minutes before eating (they crisp up a bit more as they cool)

Ingredients
  

  • 5 Medium red potatoes
  • 3 Tbsp melted vegan butter
  • 2 tsp Dried dill
  • 1 tsp Herbs de Provence
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/2 tsp Salt
  • Pinch pepper

Instructions
 

  • Preheat oven to 400F.
  • Start by dicing up your red potatoes into 1 inch pieces.
  • In a small bowl mix together melted butter with herbs and spices.
  • In a large bowl add your potatoes and then drizzle the melted butter herb mixture over the top.
  • Spread out evenly on a baking sheet. Cook on top rack in oven for ~35 minutes.
  • To further crisp up potatoes, turn oven up to 450F and bake for another 5 minutes.
