I’ve pulled together 13 of my coziest vegan curries and stews – the ones you’ve made most, rated highest, and asked me about again and again. As a Physician Associate (PA-C) and plant-based recipe developer, I build every one of these around the same idea: real comfort food that happens to be genuinely good for you. Lentils, chickpeas, and beans bring fiber and plant protein that keep you full for hours. Warming spices like turmeric, cumin, and ginger make all these recipes flavor-bombs. And most of these come together in one pot in 30 minutes or less. Grab some rice or a piece of crusty bread and pick your favorite! They all reheat beautifully, so you’re set for lunch tomorrow too.
Vegan Curry FAQ’s
Is curry always vegan?
Not always. Many Indian curries use ghee (clarified butter), cream, or yogurt in the base, and a lot of Thai curry pastes contain shrimp paste or fish sauce. Japanese curry roux blocks often have dairy. The spices themselves are always vegan. It’s the fat and the finishing ingredients you have to check.
Are store-bought curry pastes vegan?
Check the label every time. Thai red and green pastes often list shrimp paste. Thai Kitchen and Maesri’s vegetarian line are reliably vegan; Mae Ploy typically is not. Most Indian curry powders are vegan by default since they’re just ground spices.
What can I use instead of coconut milk in a curry?
Cashew cream, silken tofu blended smooth, or unsweetened oat cream all work. I personally love cashew cream!
Is vegan curry healthy?
It can be very nourishing. Legume-based curries deliver fiber and plant protein, and spices like turmeric, cumin, and ginger add flavor without sodium. Full-fat coconut milk is the main thing to be mindful of. It’s what makes the sauce rich, and a little goes a long way.

Mango “Chicken” Cashew Curry
This might be the best curry when you’re craving something creamy, slightly sweet, and seriously satisfying. The fresh mango and cashews create the silkiest sauce, while soy curls make it hearty enough for dinner. I especially love the little pops of juicy mango in every bite, it makes this curry feel extra special.
If I had to pick a curry for a busy weeknight, this butter bean curry would be high on my list. The butter beans stay hearty instead of turning mushy, and they soak up that rich tomato-coconut sauce beautifully. Even better, there’s only about 20 minutes of hands-on work, and the leftovers are just as delicious the next day.
This is the curry I’d make when I’m craving Thai takeout but want something easy at home. It has everything I love about Panang curry, rich, creamy, coconutty, and peanutty flavors without an overly complicated ingredient list. Frying the curry paste with coconut cream, garlic, and ginger makes such a difference in the final flavor.
For me, the best cozy curries are the ones that feel comforting and nourishing at the same time, and this one checks both boxes. The lentils make it creamy and filling, while roasted cauliflower adds texture and a deeper flavor. It’s simple, hearty, and exactly the kind of dinner I want when the weather starts cooling down.
When I want a curry that tastes bright and fresh while still being creamy and comforting, I make Thai green curry. The tofu adds plenty of protein, while Thai basil and curry paste bring those citrusy, aromatic flavors that make every bite interesting. It’s one of those recipes that gives you restaurant-style flavor without needing to leave home.
This is one of my favorite curries to make once fall rolls around. The creamy pumpkin curry sauce feels extra cozy, while the crispy tofu adds the perfect contrast in texture. Add some warm rice and naan on the side, and this is exactly the kind of dinner I want on a chilly night.
This might be the best curry for nights when I really don’t feel like cooking. It takes just 20 minutes, uses spices I actually keep in my pantry, and still gives you that rich, restaurant-style curry flavor. No huge ingredient list or hour spent in the kitchen, just a simple, comforting dinner that delivers.
Sometimes I can’t decide whether I want curry or a big comforting bowl of noodles, so this recipe gives me the best of both worlds. The creamy coconut curry broth, tender rice noodles, veggies, and tofu make every spoonful hearty and satisfying. This is definitely one I’d save for a cold or rainy evening.
If there’s one ingredient that was made for cozy curry, I think it might be butternut squash. Its natural sweetness works so well with the warm spices and creamy sauce, creating a curry that feels especially comforting. Give me a bowl of this with warm basmati rice and toasted naan, and I’m happy.
This is my pick when I want maximum comfort with minimum effort. Potatoes, carrots, peas, onions, and tofu simmer together in a flavorful yellow curry sauce, and the whole meal comes together in less than 30 minutes. It’s colorful, filling, and exactly the kind of easy curry I love for weeknights.
There’s a reason this curry has been loved by millions on Instagram. Tender red lentils, sweet potato, warm spices, and creamy coconut milk come together in a way that just works. It’s cozy, filling, easy to customize, and one of those recipes I can make again and again without getting tired of it.
What makes this one so good for me is that it’s not just cozy, it actually keeps me full. Red lentils melt right into the sauce, making it naturally thick and hearty, while peanut butter gives it that rich, comforting flavor. The crushed tomatoes add just enough brightness to balance everything out. This is the bowl I want when I need a seriously satisfying one-pot dinner.
This is one of my favorite stews for those nights when I want something that feels really cozy but still nourishing and filling. The mushrooms bring that deep, savory flavor, while the lentils, potatoes, and carrots make every bowl hearty enough for dinner.
