Yep, you read that title right. This is the BEST tofu scramble recipe that my husband and I have been perfecting for 6 YEARS! It is the most flavorful tofu scramble recipe out there with the perfect blend of spices. Get ready to save this one for every weekend brunch!

Ingredient notes:

  • Extra firm tofu: This is the best tofu for tofu scramble. I do NOT recommend a medium or silken tofu. It will be too liquidy and soft for this scramble.
  • Black Salt: Also known as kala namak, black salt has a unique flavor profile with a distinctive sulfurous and slightly eggy taste, which is primarily due to the presence of sulfur compounds. Only a small amount is needed for this tofu scramble. You can find it is commonly available in grocery stores, especially those that carry a variety of international or South Asian products. You can also find it in specialty spice shops or online retailers that offer a wide range of culinary ingredients, like on Amazon here.
  • Nutritional yeast: This is added at the egg for a slight cheesy flavor to the tofu scramble.

📝Step-by-Step Instructions

Step 1: In a large bowl, crumble your tofu with your fingers into med/small pieces. Leave some larger pieces if desired for more texture.

Step 2: Add all your spices to the tofu and mix gently until thoroughly coated.

Step 3: In a large saucepan over medium-high heat, warm some olive oil for a few minutes. Add in your tofu scramble. Cook for 8-10 minutes until it starts to brown and crisp slightly.

Step 4: Add nutritional yeast, mix, and cook for an additional 2 minutes.

Step 5: Serve right away with toast, avocado, salsa, or whatever side you would like for the perfect breakfast.

  • If you don’t have nutritional yeast, you can still enjoy this scramble. You can omit it completely or consider adding in a little bit of shredded vegan cheese

    1 16 ounce block extra firm tofu
  • Add all your spices and mix gently until thoroughly coated.
    1 tsp chili powder, 1 tsp cumin, 2 tsp turmeric, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/4-1/2 tsp salt, 1/8 tsp black salt*, pinch pepper
  • In a large saucepan over medium-high heat, warm some olive oil for a few minutes. Add in your tofu scramble.
    Cook for 8-10 minutes. Avoid over-mixing and let the tofu cook, untouched, for about 1-2 minutes before stirring. It should begin to get browned and crisp.
    1 tbsp olive oil
  • Add nutritional yeast, mix, and cook for an additional 2 minutes.
    2 tbsp nutritional yeast
  • Serve right away with toast, avocado, salsa, fresh fruit, pan-fried veggies or whatever side you would like for the perfect breakfast.

Notes

⭐️Pressing tofu for only 10 minutes
The trick in this tofu scramble is only pressing your tofu for a short time. EF tofu is already fairly well drained, and in this recipe we still want some moisture to our tofu. 10 minutes is sufficient for pressing. If you press for longer, you risk your scramble becoming too dry.
⭐️ Black salt provides the “eggy” taste and smell to this tofu scramble. While it is not a necessary ingredient, it will enhance the flavor of your scramble. You can find it online (like here on Amazon) or in some grocery stores. 
Other tips:
  • If you don’t have nutritional yeast, you can still enjoy this scramble. You can omit it completely or consider adding in a little bit of shredded vegan cheese.
