Whipped Tofu Chocolate Mousse

This velvety and light tofu chocolate mousse is an easy dessert than takes minutes to blend together. You would never guess that silken tofu is the main ingredient that creates that perfectly whipped, creamy texture! This one of the easiest desserts you will ever make!

What is silken tofu?

Silken tofu is a very soft tofu found at most grocery stores. It is made by coagulating soy milk without pressing, resulting in a custard-like texture.

It has higher moisture content compared to other types of tofu. It is a great dairy alternative and versatile ingredient for smoothies, vegan desserts and more because it will give a similar creamy texture like heavy cream.

Is silken tofu the same as soft tofu?

Soft tofu and silken tofu are very similar but not exactly the same. Both types of tofu are made from soy milk, but they have a slightly different texture.

Silken tofu has a smooth, custardlike texture. Soft tofu, on the other hand, has a slightly firmer texture compared to silken tofu.

Both will work well in this tofu cocoa mousse recipe!

What You Need to Make Tofu Mousse

  • Silken tofu – This is a custard-like tofu found in the refrigerator section or on the shelf in the grocery store that will create our creamy base and silky texture. I recommend using refrigerator one because it will give the tofu mousse a fresher flavor. You can also use soft tofu but I do not recommend extra firm tofu. Once blended this will create the mousse-like texture.
  • Dark chocolate – I recommend using a good quality dark chocolate that is ~70% cocoa to give this tofu mousse a rich chocolate flavor. You can also use chocolate chips if you prefer. My favorite dark chocolate Hu Chocolate. I personally think this tastes a lot better than milk chocolate, but if you prefer a vegan milk chocolate version you could try it as a different flavor.
  • Maple syrup – For a touch of sweetness we will use maple syrup. You could also use honey or agave syrup if you prefer.
  • Vanilla extract– Just a touch for more flavor.
  • Pinch of salt – A hint of salt enhances the sweetness and gets rid of any bitterness from the dark chocolate.

How to Make Tofu Chocolate Mousse

Step 1: Let silken tofu come to room temperature by setting it on the counter for 45 minutes-1 hour.

Step 2: Melt dark chocolate in microwave in 30 second intervals. Let it cool.

Step 3: Add all ingredients to a food processor or high-speed blender and blend until it forms a creamy mousse. Turn it up to high speed for 1-2 minutes to help create that “whipped” texture.

Step 4: Place your mousse in glass dessert dishes or ramekins. If using a clear dish, you can create a beautiful layered look using vegan yogurt or whipped cream! Place in fridge for 45 min-1 hour to let it thicken up for best results.

Step 5: Enjoy with whipped cream, fresh berries, chocolate curls, fresh mint, or whatever you desire!

Topping Ideas

Whipped cream – top this tofu chocolate mousse with a vegan whipped cream, whipped coconut cream, or even vegan yogurt. I like to do a layered look with this as well.

Fresh fruit – I love the addition of vibrant fruit on top like sliced strawberries, raspberries, or even blackberries. You could even add part of a frozen ripe banana to the mixture to give it a banana flavor.

Chocolate shavings – chop up some leftover chocolate bar or make chocolate shavings or curls (how cute are chocolate curls?!)

Fresh mint – there’s something about a fresh mint leaf on top of chocolate mousse that is the perfect garnish!

How to store leftover tofu mousse

This homemade silken tofu chocolate will be good for up to 3-3 days in the fridge.

One of the great parts about this tofu chocolate mousse is you can make it 24 hours in advance (which is perfect for a dessert for a dinner party or gathering). Serve in ramekins or glass dessert dishes and top with some vegan whipped cream, fresh mint, or fresh fruit for a pretty garnish!

Common FAQs

Does tofu chocolate mousse taste like tofu?

Definitely not! The beauty of silken tofu is that it adopts whatever flavors it is added to. This tofu mousse is creamy, chocolatey, and does not taste like tofu at all.

What else can I use silken tofu for?

Is silken tofu healthy?

Silken tofu is a good source of vitamins and Omega 3 and 6. It is less dense compared to firm tofu, therefore is a lower overall in macronutrients such as protein. Most firm tofus have twice the amount of protein has a silken tofu. I love to combine silken tofu with other fruits in a silken tofu smoothie for a nutrient-dense and delicious breakfast.

Can I make tofu mousse with other types of tofu?

No, this recipe works best with silken tofu because it is the softest and smoothest texture. You can try it with a firm tofu, but it will not be as creamy.

  • Peppermint – Add in 1/4 – 1/2 tsp of peppermint extract for a mint chocolate mousse
  • Espresso – Add in 1 tsp of instant espresso powder for a caffeine and coffee boost
  • Peanut butter – Add in 1-2 tbsp of peanut butter or another nut butter for a chocolate peanut butter flavor

  • You can use other types of chocolate for this recipe. Semi-sweet chips are also great or even vegan white chocolate!
  • Room temp ingredients are crucial – Chilled silken tofu combined with warmer chocolate will lead to separation and a mousse that isn’t as creamy and light. Let your silken tofu sit on the counter for 45 minutes+ or until room temp before blending.

Ingredients
  

  • 16 oz silken tofu room temperature*
  • 5 oz high quality vegan dark chocolate ~70%*
  • 2-3 tbsp maple syrup adjust to taste
  • 1 tsp vanilla
  • pinch salt

Optional

Instructions
 

  • If using refrigerated silken tofu, let it come to room temp for at least 45 minutes- 1 hour before using. No need to press this tofu, simply drain it from the package and set aside.
    16 oz silken tofu
  • Melt your dark chocolate in 30 second intervals in the microwave until smooth. Let it cool on the counter for a few minutes.
    *Don't add hot melted chocolate to your tofu mousse*.
    5 oz high quality vegan dark chocolate
  • In a food processor or blender, add the silken tofu, maple syrup, melted dark chocolate, vanilla extract, and pinch of salt.
    Blend until it forms a creamy mousse that is well-combined.
    FYI* You may have to stop to scrape down the sides of the food processor a few times to get it to come together.
    2-3 tbsp maple syrup, 1 tsp vanilla, pinch salt
  • Spoon your tofu mousse into ramekins or your dessert dishes. If using glass dishes, you can layer your mousse with vegan yogurt or whipped cream for a beautiful layered look.
    Place in the fridge for 45 min-1 hour or until thickened and chilled to your liking.
  • Serve your chocolate tofu mousse with vegan whipped cream, chocolate shavings, fresh berries, a mint leaf or whatever your like!
    Enjoy right after you remove from the fridge.

Notes

⭐️Why does the silken tofu have to be room temperature?
Chilled silken tofu combined with warmer chocolate will lead to separation and a mousse that is grainy with chunks of cholate. Let your silken tofu sit on the counter for 45 minutes-1 hour or  until close to room temp before blending. 
⭐️ I like to use a high quality 70%+ dark chocolate bar for this recipe, but you could also use dark chocolate chips. I personally think Hu Chocolate makes the best tasting dark chocolate bars!

    My daughter has a sweet tooth and a relatively new dairy allergy. Chocolate mousse (and anything else chocolate) is one of her favorite dishes, so I made this when she came to visit last. She loved it and could hardly believe it was dairy free!
