If you’re looking for a drink that feels like summer in a glass- this is it! This strawberry hibiscus spritz is light, bubbly, a little floral, and just sweet enough. The gorgeous pink color comes from the hibiscus and strawberry and the flavor is refreshing and fruity.
What I love most about this recipe is how simple it is to make, but it tastes like something you’d order at a really cute cocktail bar. You’ve got a concentrated hibiscus tea for that slightly tart, floral base, fresh strawberry puree (that’s super easy to make) for natural sweetness, a touch of simple syrup to balance it out, and prosecco to bring the bubbles. Finish it with a squeeze of lemon for a little brightness.

This is my ultimate patio-golden-hour drink ☀️—think slow sipping, maybe with friends over. It’s right up there with my blueberry lavender vodka lemonade 🍋 (which I’m obsessed with), but this one leans more bubbly and floral. 🌺
By the way, you can make this a mocktail too if you’re looking for that fancy-feel without the alcohol. Instead of the prosecco, use club soda or lemon lime soda.

Strawberry Hibiscus Spritz Ingredients
- Hibiscus Tea – You can find hibiscus tea at most grocery stores. Often it will be combined with other fruity flavors (which is okay). I used the Tazo Passion Hibiscus Tea. Make sure to make your tea extra concentrated for this recipe. For example, for 12 oz of hot liquid I added two teabags and let it steep for the full time. (12 oz will create two cocktails so adjust to what you need)
- Strawberry Puree- This is simply strawberries blended with a small amount of water. Super easy to make for this recipe!
- Simple Syrup – You can purchase this or make your own.
- Prosecco – The perfect delicious bubbly for a spritz !
- Lemon – To finish off the drink with a little brightness
How to a Strawberry Hibiscus Spritz
Make your tea & strawberry puree
This spritz has that cute-cocktail bar feel but is actually super easy to make in your own home.
🌺 You want to first make your hibiscus tea because the steeping is the longest step.
If you are making one cocktail, you just need 6 oz of hot water combined with your hibiscus tea bag. Make sure to let it steep for the recommended time (if not longer) to make it really concentrated. If you are making more than one cocktail, adjust the amount of water/tea bags as needed.
I recommend letting it cool completely ❄️ (popping it in the fridge or freezer helps) before adding to your cocktail shaker with the ice. If you add hot tea, it will melt the ice quickly and you will have a more watery drink – not good!
You will then want to make the strawberry puree 🍓, which maybe sounds complex – but it’s totally not!
Just combine your cut strawberries in a blender with the water, blend until smooth – and voilà! You’ve got strawberry puree ready to go for your cocktail. No need to strain.
You can make the tea & strawberry puree ahead of time and store in the fridge for up to 3–4 days.
Combine in a shaker
To make your cocktail, combine the tea, strawberry puree, and simple syrup in a cocktail shaker with a small amount of ice. Shake until it is chilled.
In a tall glass (I used a 16 oz high ball glass), add a very small amount of ice (you don’t need a lot since your mixture is already chilled). Add the tea mixture. Top it with prosecco 🍾 (the amount of prosecco depends on the size of the glass – so if you want a stronger drink, add less tea mixture). Add a squeeze of lemon juice if you’d like.
Using a tall spoon, give it a stir to combine.
🍓 Top with a strawberry garnish or lemon. Enjoy right away!
How to Make this a Mocktail
Instead of prosecco, simply top your drink with club soda, lemon lime soda, or ginger beer for a ginger flavor!

You could try raspberry or blackberry- but your drink will look a little different in color and taste. You will want to strain out the seeds since they are larger than strawberry seeds.

- 4-6 oz prosecco (add as much as needed)
How to Make Simple Strawberry Puree
- 1 heaping cup sliced strawberries tops removed
- 1-2 tbsp water

Strawberry Puree
- You can make a simple strawberry puree by blending strawberries and a small amount of water. Blend on high until smooth and no chunks. 1 heaping cup of strawberries will make about 3/4 cup puree which is enough to make about 4 drinks. This is a simple step you can prep in advance.

- Make your hibiscus tea by combining 1 tea bag with 6 oz of hot water, letting it steep fully. If possible, let it cool completely (can pop in the fridge) so that it doesn't melt all the ice in the shaker and water down your drink. You can also prep this step in advance. In a cocktail shaker, add a small amount of ice. Add your simple syrup, hibiscus tea, and strawberry puree. Shake until well-combined and chilled.
- Add a small amount of ice to a tall glass (I used 16 oz glasses). Add your hibiscus strawberry mixture. Top with prosecco (as much as you want). Give a gentle squeeze of a little lemon to brighten the drink. Use a tall cocktail spoon to give it a gentle stir.Garnish with lemon, strawberry, or hibiscus petals. Enjoy!Tip: If you want a stronger cocktail, use less of the strawberry hibiscus tea mixture and more prosecco.
Notes
- You won’t need much ice here since the drink is already chilled from the shaker. No shaker? Just stir everything with ice to get it nice and cold.
