This recipe (unbeknownst to me) climbed to nearly 300k views on TikTok over the past year, and everyone begged me to share it on my website. So here I am, sharing this famous veggie recipe that transforms beet and carrot skeptics into lovers of nature’s candy… all thanks to a maple glaze that caramelizes the veggies to perfection.

When the temps start to drop in the fall…I’m craving all the roasted veggies! Especially as the holidays approach, these beets & carrots are the perfect side dish to so many meals.

I’ve served this for Thanksgiving, Christmas, or just a random side for a weeknight meal, and everyone loves them — including my husband, who has definitely been a beet skeptic!

That maple glaze literally makes these colorful veggies taste like candy! Try it for yourself, and I can almost guarantee this will be your fave way to eat veggies.

Ingredients for Beets & Carrots

  • 3 medium beets (or 5-6 small)
  • 3 large carrots
  • Maple syrup
  • Extra virgin olive oil
  • Balsamic oil
  • Dijon Mustard
  • Salt & Pepper
  • Fresh thyme leaves (optional)

How to Make Roasted Beets & Carrots

Prep: Chop Beets & Carrots

Make sure to wash and peel before you chop them. Try to make them similar sizes, if possible. You may have to cut some of the large carrot pieces in half.

1. Whisk Your Maple Glaze

In a small bowl, whisk together your maple glaze ingredients until combined.

2. Pour Over Veggies

Spread your chopped beets and carrots on a baking sheet. Pour the glaze over the veggies

Tip: Try to get out those Dijon mustard clumps the best you can.

Tip: I personally do not use parchment paper for beets and carrots. I find they get crispier without the paper (however, it is more cleanup, so do whatever works best for you)

3. Evenly Coat

Use your hands to toss the veggies with the maple glaze. Sprinkle on some salt and freshly ground pepper to your liking.

4. Roast

Roast your veggies at 400°F for 30-40 minutes, flipping halfway. You know they are done when they are fork-tender and caramelized. Top with fresh thyme leaves, if desired.

Tip: I find mixing with your hands is the best way to evenly coat them.

Tip: Taste your roasted beets and carrots and add more salt and pepper to taste.

How to Store Leftover Beets And Carrots

These root veggies are great for leftovers. Store them in a glass airtight container in the fridge for 3-4 days. You can also freeze them for a few months. Reheat in the microwave or pop them back in the oven for 10 minutes or until heated through.

Ingredients
  

  • 3 medium beets (or 5-6 small beets) washed, peeled, and chopped
  • 3 large carrots washed, peeled, and chopped
  • 3 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dijon mustard
  • Salt and pepper to taste
  • Fresh thyme for topping

Instructions
 

  • Preheat oven to 400F.
  • In a small bowl whisk together glaze ingredients: maple syrup, olive oil, balsamic vinegar, dijon mustard.
    3 tbsp maple syrup, 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp dijon mustard, Salt and pepper to taste
  • In a large bowl combine chopped beets and carrots. Pour glaze over them and toss with your hands to coat. Sprinkle with some salt and pepper.
    3 medium beets, 3 large carrots
  • Spread out evenly on a baking sheet and bake for 30-40 minutes (flipping halfway) until fork tender and caramelized.
    * Roasting time varies based on size of beets and oven.
  • Taste your veggies and add more salt & pepper to taste. Top your beets & carrots with some fresh thyme leaves if desired. Enjoy!

Notes

Storage: Store in the fridge for up to 3-4 days. I reheat in the microwave for convenience, but you can pop them back in the oven for 10 minutes as well.
