Maple Glazed Roasted Beets and Carrots
I used to think beets tasted like dirt. But I realized...I was not making them right! So I created this flavorful maple glazed roasted beets and carrots recipe in 2023 that blew my mind...and apparently yours too! This recipe (unbeknownstto me) climbed to nearly 300k views on Tiktok in the past year with everyone begging me to share the recipe on my website. So here I am sharing this famous veggie recipe that transforms beet and carrot skeptics into lovers of nature's candy...all thanks to a maple glaze that caramelizes the veggies to perfection.

Preheat oven to 400F.
In a small bowl whisk together glaze ingredients: maple syrup, olive oil, balsamic vinegar, dijon mustard.
3 tbsp maple syrup, 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp dijon mustard, Salt and pepper to taste
In a large bowl combine chopped beets and carrots. Pour glaze over them and toss with your hands to coat. Sprinkle with some salt and pepper.
3 medium beets, 3 large carrots
Spread out evenly on a baking sheet and bake for 30-40 minutes (flipping halfway) until fork tender and caramelized.* Roasting time varies based on size of beets and oven. Taste your veggies and add more salt & pepper to taste. Top your beets & carrots with some fresh thyme leaves if desired. Enjoy!
Storage: Store in the fridge for up to 3-4 days. I reheat in the microwave for convenience, but you can pop them back in the oven for 10 minutes as well.
*Make sure to wash & peel your veggies before you chop them. Try to cut them similar sizes, if possible. You may have to cut some of the large carrot pieces in half.
