Asian vegan lettuce wraps are better than the P.F. Chang’s version with savory chickpeas and fresh veg all wrapped inside a crisp, buttery lettuce boat and topped with crunchy peanuts and diced onion. Another plus- they only take 15 minutes to make!

My teenage life was filled with trips to PF Chang’s for their insanely good lettuce wraps. This was before my plant-based days and I used to gobble those things up like its not tomorrow.

Now a plant-based gal, I KNEW I had to make some incredible meatless lettuce wraps. For those that know me, I love a good chickpea dish so I knew I had to use them as the star in this recipe.

So take a trip down memory lane (if that was your childhood too – lol) or create some new memories with these incredibly delish vegan lettuce wraps. Trust me – you won’t eat just one!!

Vegan Lettuce Wrap Ingredients

  • Chickpeas
  • Onion
  • Red Onion
  • Shredded carrots
  • Water chestnuts
  • Butter lettuce*
  • Soy sauce
  • Hoisin sauce
  • Sesame oil
  • Peanut Butter
  • Maple syrup
  • Garlic & Ginger

What type of lettuce should I use for vegetarian lettuce wraps?

Butter lettuce is a top choice due to its soft, flexible leaves and mild flavor. Romaine lettuce is another excellent option, offering crisp and sturdy leaves that hold fillings well. You could even use iceburg lettuce too.

How to Make Vegan Lettuce Wraps

Sauté veggies

In a large pan, begin warming some sesame oil over medium heat. Add your diced onion, red pepper, and garlic. Sauté for a few minutes then add your shredded carrots and cook for another minute or two.

Whisk your sauce

While your veggies are frying, whisk up your sauce together in a small bowl or dish.

Mash chickpeas

Pour your rinsed chickpeas in a large bowl and and with a potato masher or the back of a fork, mash about half of your chickpeas

Simmer chickpeas

Add the chickpeas, sauce, and water chestnuts to the veggie mixture over the stove. Stir until well combined and simmer for another 3-5 minutes until the mixture is warmed through.

Serve and enjoy!

Serve in lettuce leaves or over noodles or rice. Top with crushed peanuts, cilantro, and/or green onion.

Tip: Finely dice your veggies so that each bite if filled with the perfect mixture! You can even use a food processor for this.

What can I top vegan lettuce wraps with?

There are lots of options including:

  • sliced avocado
  • diced green onion
  • pickled onions
  • fresh herbs (cilantro, mint, parsley)
  • fresh lime
  • crushed nuts (peanuts, almonds, cashews, etc)

How do I store leftover vegan lettuce wraps?

Keep the filling and lettuce leaves in separate airtight containers to prevent the lettuce from becoming soggy. Store the filling for up to 2-3 days. Reheat in the microwave or over stovetop.


Pro Tips


  • Switch it up! You can add in different veggies to this mix like diced mushrooms, zucchini, or even edamame for more protein.

Ingredients
  

  • 1 tbsp sesame oil
  • 1/2 cup finely diced red pepper
  • 1/2 cup finely diced red onion
  • 1/2 cup shredded carrots roughly chopped into smaller bits
  • 2 cloves minced garlic
  • 15 oz chickpeas drained and rinsed
  • 1/2 cup finely diced water chestnuts
  • 6-8 large butter lettuce leaves*

For the Sauce

Instructions
 

  • In a large pan, begin warming some sesame oil over medium heat. Add your diced onion, red pepper, and garlic. Sauté for 3-4 minutes, stirring occasionally. Add your shredded carrots, stir and cook for another 1-2 minutes.

  • While your veggies are frying, whisk up your sauce together in a small bowl or dish.

    15 oz chickpeas, 1 tbsp soy sauce, 2 tbsp hoisin sauce, 1 tbsp sesame oil, 1 tbsp peanut butter, 1 tbsp maple syrup, 1 tsp sriracha, 1 clove minced garlic
  • Add the chickpeas, sauce, and water chestnuts to the veggie mixture over the stove. Stir until well combined and simmer for another 2-4 minutes until the mixture is warmed through and the sauce has infused into the mixture.
  • Serve in lettuce leaves or over noodles or rice.
    Top with crushed peanuts, cilantro, and/or green onion.
