Green Goddess Dressing (Vegan)
Even my salad-skeptic husband will eat a giant salad as long as it has this creamy green goddess dressing on top. This recipe just gets it right. Some recipes call for what seems like 5 different herbs - you only need two of your favorites for this recipe (I recommend parsley be one of them). I also found that using just Greek yogurt created a dry taste in my mouth...you can solve this problem by adding a small amount of mayo. You can blend up this heavenly dressing in just 5 minutes and it's ready to go for dressing, drizzling, dipping, dunking, and more!

- 3/4 cup loosely packed parsley leaves
- 3/4 cup loosely packed cilantro leaves
- 1 cup plain unsweetened Greek yogurt dairy or dairy-free
- 1/4 cup mayonnaise (regular or vegan)
- juice of half a small lemon 2-3 tbsp
- 2 tsp capers
- 1 clove garlic
- 1/4 tsp salt
- fresh black pepper to taste
Roughly chop your herbs (can include some tender stems) and measure out about 3/4 cup of each herb.
Add all your ingredients to a blender or food processor and blend until smooth. Taste and add more salt if desired. The dressing will thicken slightly in the fridge.
Store in the fridge in an airtight glass container for up to a week. Enjoy!
