Strawberry Frozen Yogurt Bars (Dairy-Free)

These strawberry frozen yogurt bars are the perfect healthy treat with a crunchy delicious peanut butter granola base and creamy strawberry yogurt topping.

Ingredients

Strawberry Yogurt Topping

  • 1 ⅓ cups non-dairy unsweetened yogurt such as almond or soy (If you like it sweeter, use a sweetened yogurt)
  • 1 cup frozen strawberries

Granola Base

Optional Toppings

  • strawberry juice from melted strawberries
  • sliced strawberries

Instructions

  • Start by making your peanut butter granola base. In a large bowl mix together oats, peanut butter, maple syrup, vanilla, coconut oil, and a little salt.
  • In a parchment lined 8x8 pan, press and even layer of the granola mixture over the bottom with a spoon.
  • In your high speed blender mix together your strawberries and yogurt until well combined.
  • Pour strawberry mixture over granola evenly.
  • Optional: Melt a few frozen strawberries and use the strawberry juice to create swirls in the yogurt bars. Using a spoon pour a small dime-sized amount of strawberry juice scattered across the bars. With a fork or toothpick, drag the dot until a swirl forms.
  • Top with thin slices of strawberries. (Optional: Cut your strawberries in a heart shaped for a beautiful dessert that's also festive for Valentine's Day!)
  • Freeze bars for 2 hours.
  • Cut into squares and store in a container in the freezer with parchment between bars.
  • When ready to eat, remove from freezer and let thaw for 4-5 minutes before eating.

Notes

Storage:
    • Store in the freezer in a container with parchment between the bars for up to 3 months. When ready to eat, let the bar thaw on the counter for 4-5 minutes before eating
PRO TIPS
    • Use parchment paper to prevent your bars from sticking to the pan.
    • If you like sweeter bars, use a sweetened yogurt with vanilla.
    • You will need a sharp knife to cut your bars when they are right out of the freezer. If they are too hard, let them sit for a few minutes to thaw before cutting.
