Peach Cobbler Overnight Oats

These creamy peach overnight oats are a delicious blend of creamy oats and juicy peaches enveloped in warm cinnamon spices.

Ingredients

  • 1 medium peach diced
  • ½ cup old-fashioned oats
  • ¾ cup non-dairy milk oat, almond, or soy (sweetened if you like it sweeter)
  • 1-2 tablespoon pure maple syrup add 2 tablespoon if you like it sweeter
  • ½ teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice
  • 1 tablespoon ground flaxseed
  • pinch salt
  • chopped pecans (optional) for topping

Instructions

  • In a mason jar, combine oats, milk, maple syrup, vanilla, spice, ground flaxseed, and a pinch of salt. Mix well and add half of your diced peaches, adding the remaining on top or add them right before serving.
  • Cover and allow to rest in the fridge for 4 hours or overnight.
  • Top with pecans if desired. Enjoy!

Tips:
  • If you make a large batch of these peach overnight oats for meal prep, add a little extra milk (~¼ cup) so that it remains creamy as it settles in the fridge longer.

No, you can let it sit for 3-4 hours in the fridge and it was start to get creamier. It is better if it sits overnight, though.
What can I use instead of pumpkin pie spice?
I recommend using ¼ teaspoon cinnamon and ¼ teaspoon nutmeg (if possible). You can use just cinnamon but pumpkin pie spice adds a greater depth of flavor and mimics a dessert.
Can I use other fruit?
Yes, you could try nectarines, plums, pears, apples, and more! You could even make it with berries for a "Berry Crisp"!
Can I use frozen peaches?
Yes, you can but defrost before use or else your overnight oats will be more watery.
