Ranch Potatoes Recipe

These ranch potatoes combine roasted crispy red potatoes drizzled with a homemade ranch butter. They are incredibly addicting - and SO easy to make!

Ingredients

  • 5 medium red potatoes washed and diced into 1 inch pieces (no need to peel)
  • 3 tbsp melted butter choose a plant-based butter if vegan (like Earth Balance)
  • 2 tsp dried dill
  • 1 tsp Herbs de Provence
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • pinch pepper

Optional Topping

  • chopped fresh parsley

Instructions

  • Preheat oven to 425F.
  • In a small bowl mix together melted butter with herbs and spices. (The herb mixture will seem thick, but it will spread evenly over the potatoes nicely!)
    3 tbsp melted butter, 2 tsp dried dill, 1 tsp Herbs de Provence, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp salt, pinch pepper
  • In a large bowl add your potatoes and then drizzle the melted butter herb mixture over the top. Toss until combined.

  • Spread out evenly on a baking sheet. Cook on top rack in oven for ~30 minutes until browned and crispy. Stir your potatoes halfway to ensure even cooking.
    Optional: To further crisp up potatoes, broil potatoes for a 1-2 minutes (watch closely so they don't burn!)
  • Sprinkle with freshly chopped parsley for a pretty garnish. Serve right away - enjoy on their or dip them in more ranch!

Can I make these ranch potatoes in the air fryer?
Yes, you can make ranch potatoes in the air fryer. Preheat your air fryer for a few minutes at 400 F. Add your potatoes as evenly as possible in the air fryer basket. Air fry for 15-20 minutes, shaking halfway through, until you have tender potatoes with crispy golden edges.
Why use butter instead of olive oil?
  • Since we are trying to replicate that "ranch" flavor without the use of a ranch packet, the butter provides a creaminess that mimics ranch. If you don't have butter, you can still use extra virgin olive oil and get great results!
