Apple Pie Baked Oatmeal

This Apple Pie Baked Oatmeal is warm and chewy with cinnamon and nutmeg spices. It is the perfect fall breakfast or dessert.

  • Preheat oven to 375 F or 190 C. In a large bowl whisk together your dry ingredients: rolled oats, spices, baking powder, salt.
  • In another bowl, combine wet ingredients including plant-based milk, maple syrup, flax egg, vanilla extract, and lemon juice.
  • Add the wet ingredients to the dry and mix until well combined. Fold in the diced apples.
  • Pour oat mixture into 8x8 glass pan. Bake for 40 minutes. The top should be golden brown.
  • Let cool for 10 minutes before before cutting into 4 large squares. Top with yogurt, peanut butter, maple syrup, or whatever you like. Enjoy!
    *Enjoy this as a dessert with a scoop of vanilla ice cream on top!

Notes

Note 1: The best apples for this recipe are either Honeycrisp or Granny Smith because they have a firm texture, a good balance of sweetness, and lower moisture content. Granny Smith has a more tartness that pairs well with the sweet oatmeal. 
Substitutions/Variations
Don't have an ingredient? Don't worry!
    • Instead of a flax egg you can use a chia egg (just combine 2 tablespoon chia seeds with 4 tablespoon of water and let sit for 5 minutes. 
    • Instead of brown sugar or maple syrup, you can use sweeteners of your choice (such as agave, honey (if not vegan), or coconut sugar). This may alter the flavor your baked oats.
Add different flavors!
    • Add some protein with vanilla protein powder
    • Add a scoop of chocolate chips for a chocolately flavor
    • Add peanut butter for extra flavor that pairs well with apples
