Strawberries and Cream Overnight Oats (Vegan)

Ingredients

  • ½ cup old fashioned oats
  • ½ cup soy or oat milk sweetened if prefer sweeter flavor
  • ¼ cup vanilla plant-based greek yogurt
  • 2 teaspoon chia seeds
  • 1 teaspoon maple syrup
  • 3-4 medium strawberries diced

Instructions

  • In a glass jar or cup, add in old fashioned oats, plant milk, yogurt, maple syrup, and chia seeds. Give it a good stir.
  • Mix in your diced strawberries.
  • Cover and let sit for at least 4 hours or overnight.  If they are still a little chewy after 4 hours, let them set for longer. The longer they sit, the creamier they get!  Give it a stir before enjoying.

Tips:
  • Sweeten it up: If you like your oats on the sweeter side, add more natural sweetener such maple syrup or agave nectar. Alternatively, you can use a sugar substitute or mashed banana for a healthier option.
  • Add extra toppings: Consider adding sliced almonds, hemp seeds, flaxseeds, or shredded coconut for added crunch and nutrition.

Can I use frozen strawberries?
Yes, you can substitute with frozen strawberries but I recommend defrosting and draining them before adding to your overnight oats (or else they will become soggy).
