Mediterranean Cucumber Bites (Easy Appetizer or Snack)

These crunchy Mediterranean Cucumber Bites are a fun, healthy snack or app with creamy Mediterranean hummus, cherry tomatoes, feta crumbles, and fresh parsley.

Ingredients

  • ½ cucumber sliced
  • ~⅓ cup Mediterranean hummus
  • 5 cherry tomatoes halved
  • ¼ cup feta cheese (dairy-free if vegan)
  • 1-2 tablespoon fresh diced parsley

Instructions

  • Wash and dry your cucumber. Slice your cucumber into half-inch slices. In this small batch recipe I used half the cucumber to create 9 slices of cucumber but you can create as many as you want.
  • Spread out your cucumber rounds on a plate and top each cucumber slice with some Mediterranean hummus (1-2 tsp). Top with half a cherry tomato, sprinkle of feta cheese, and diced parsley.
  • Enjoy right away or store in the fridge for 1-2 hours.

FAQ:
Can I make my own hummus for this recipe?
You can definitely make your own hummus for this recipe. Make a simple garlic hummus or a Mediterranean hummus or choose a unique flavor like my Everything Bagel Hummus.
Can I prep these ahead of time for a party? 
You can, but I would only prep 1-2 hours in advance. Cucumbers have a high water content and will release their juice the longer they sit (see below how to prevent watery cucumbers). These cucumber bites are super easy to prepare (<10 minutes) so they should be easy to assemble right before a party or gathering. 
How do I prevent the cucumber bites from becoming watery?
Choose a firm, fresh cucumber (English cucumbers have lower water content). Slice your cucumber and pat dry each slice with some paper towel.
Bonus: Sprinkle a small amount of salt over the cucumber slices and let them sit for about 10-15 minutes (the salt helps draw out excess moisture). Afterward, rinse the cucumber slices and pat them dry before using.
I recommend assembling your cucumber bites close to serving time. 
Storage
Cucumber bites can be stored in an airtight container in the refrigerator for up to 2-3 days. However, it's important to note that cucumbers have high water content, and they may become watery or lose their crispness over time.
I highly recommend making these bites right before eating.
