Easy Air Fryer Sweet Potato Toast

You will love this simple breakfast, snack or dessert. Air Fryer Sweet Potato Toast is tender, slightly sweet, and customizable with your favorite sweet or savory toppings!

Ingredients

  • 1 medium sweet potato (~300g)
  • Cooking spray: avocado oil or olive oil non-aerosol
  • salt and pepper to taste

Instructions

  • Cut sweet potato into ¼ inch slices (You likely can get 4-5 quality slices out of one sweet potato)
  • Preheat air fryer at 400F for 3 minutes.
  • Spray each piece of sweet potato with a small amount of oil. Spread slices in air fryer basket evenly with no overlap.
  • Air fryer for ~ 6 min, then flip and air fryer for another 5-6 min. Cooking time may vary based on air fryer. Your sweet potato should be lightly browned but not burned on the edges. If you sweet potato still feels hard, air fry for another 1-2 minutes.
  • Top with salt and pepper or with other fun toppings! (See below for ideas)

Notes

Tips:
    • Be choosy. Select only the best sweet potatoes for this toast including ones are that are long and skinny so you can get toast-size pieces.
    • Turn up the heat. Preheat your air fryer for 3-5 minutes so that it's ready to go for your sweet potato. It will cook much more efficiently when pre-heated.
    • Make it mini! Instead of cutting your sweet potato into long slices, consider cutting it into circles which is easier. Then you can make "mini" toasts.

Make it in the toaster oven: 
You can make sweet potato toast on a baking sheet in an oven.
Slice your sweet potatoes as you would for the air fryer recipe and bake on a baking sheet with parchment paper for 15-20 minutes at 400 F (flipping halfway) until tender and lightly browned on the edges.
