Garlic Rosemary Butter Smashed Sweet Potatoes
These crispy smashed sweet potatoes are a mouthwatering side dish drizzled with a garlic rosemary infused butter.

- 2 medium sweet potatoes sliced into ½ -1 inch pieces
- 4 tablespoon vegan butter
- 2 sprigs rosemary fresh
- 2 large cloves fresh garlic minced
- Salt and pepper to taste
Make Garlic Rosemary Butter
Infuse your butter with garlic and rosemary. Begin by melting your butter in a small saucepan over low-medium heat.
Add in minced garlic and saute for 1 minute.
Add in rosemary sprigs and simmer for 5 minutes.
Let infused butter sit for 10 minutes. Gently remove rosemary pieces off main branch using spoon. They should fall off easily.
Smash and Broil
Remove roasted sweet poatoes and gently smash with a fork (so that some of the sweet potato contents oozes out).
Drizzle garlic rosemary butter on top.
BROIL for 15 minutes until crispy.
Allow to cool for at least 5 minutes before sprinkling with salt and pepper. Enjoy!
