First, measure out your ingredients and set aside so they are ready to go. Line a baking sheet with parchment paper.
Heat a large pan over medium heat. Add your coconut oil and let it melt completely and warm up before you add your old fashioned oats. Toss until well coated with the oil.
2 cups old fashioned oats, 3 tbsp coconut oil
Cook oats for 5-6 minutes, mixing every minute or so. The oats will start to become more fragrant and slightly golden. I like to press the oats firmly into the pan with a spatula to help them "crisp" up.
Turn heat down slightly. Stir in maple syrup. Again, press the mixture firmly into the pan, then mixing 1-2x.

Stir in nuts, seeds and spices, toast for another 2 minutes, tossing occasionally.
1/3 cup sliced raw almonds, 1/3 cup chopped raw pecans, 1 tbsp ground flaxseed, 1 tbsp hemp seeds, 1/4 tsp cinnamon, pinch salt
Remove from heat. Add dried cranberries.

Spread granola evenly over baking sheet. If you want clusters, be sure to press the granola together and down firmly with a spatula. Let cool for ~ 10 minutes and it will crispy up.
Store in air-tight container for up to 2 weeks. Enjoy on its own with some milk and fruit or on top of yogurt or ice cream for a treat!.
