15 Minute Stovetop Granola (Super Easy!)

Grab a pan & a few pantry ingredients and within 15 minutes you'll have crispy, caramelized, delicious stovetop granola - NO OVEN NEEDED! Cleanup is also easy when all you need is a pan.
I've become addicted to making granola like this - and in so many forms. Craving cinnamon raisin granola? Cherry chocolate? No prob, I just adjust this recipe with some simple swaps and I've got a crunchy sprinkle on my yogurt in no time. I've got tons of fun ideas for you (scroll up a little bit to find them!)

Ingredients

  • 2 cups old fashioned oats
  • 3 tbsp coconut oil
  • 1/3 cup maple syrup
  • 1/3 cup sliced raw almonds
  • 1/3 cup chopped raw pecans
  • 1/3 cup dried cranberries or dried cherries
  • 1 tbsp ground flaxseed
  • 1 tbsp hemp seeds optional
  • 1/4 tsp cinnamon
  • pinch salt

Instructions

  • First, measure out your ingredients and set aside so they are ready to go. Line a baking sheet with parchment paper.
  • Heat a large pan over medium heat. Add your coconut oil and let it melt completely and warm up before you add your old fashioned oats. Toss until well coated with the oil.

  • Cook oats for 5-6 minutes, mixing every minute or so. The oats will start to become more fragrant and slightly golden. I like to press the oats firmly into the pan with a spatula to help them "crisp" up.
  • Turn heat down slightly. Stir in maple syrup. Again, press the mixture firmly into the pan, then mixing 1-2x.

  • Stir in nuts, seeds and spices, toast for another 2 minutes, tossing occasionally.

  • Remove from heat. Add dried cranberries.

  • Spread granola evenly over baking sheet. If you want clusters, be sure to press the granola together and down firmly with a spatula. Let cool for ~ 10 minutes and it will crispy up.
  • Store in air-tight container for up to 2 weeks. Enjoy on its own with some milk and fruit or on top of yogurt or ice cream for a treat!.
