  • In a small bowl, add your chopped apples, ground cinnamon, nutmeg, and pinch of salt.
  • Microwave for ~ 2 minutes until apples are softened.
  • In a medium glass bowl or container, add the softened apples, old fashioned oats, pure maple syrup, vanilla extract, non-dairy milk, and chia seeds.
  • At this point you can separate the oat mixture into two containers (this creates two servings) or you can keep it all in one bowl. Cover it and place it in the fridge for at least 4 hours but ideally overnight (8+ hours) for the best texture.
  • The next morning give the apple mixture a good stir and enjoy! Feel free to add other toppings like granola, nut butter, nuts & seeds, yogurt, and more!

Notes

⭐️The best apple for this recipe is a crisp apple like Honeycrisp or Pink Lady but you can use whatever you have on hand. Dice this up into small pieces.
⭐️This recipe calls for more liquid than most overnight oat recipes because it really helps for oats soften into a creamy, smooth texture. The apples will also release more of their juices and spices into the mixture with more liquid. 
Other tips:
  • Optional add-ins: Greek yogurt, protein powder, nut butter, nuts & seeds, other fruits
  • I recommend old-fashioned oats for this recipe for the best texture, but you could also consider trying it with quick oats.
  • You don't have to eat overnight oats cold! Warm these up in the microwave in the morning and they taste amazing.
