Pesto Pistachio Avocado Toast

An upgrade on avocado toast with creamy pesto and crunchy pistachios.

Ingredients

  • 1 large piece sourdough or multigrain bread
  • ½ avocado
  • 1-2 teaspoon vegan pesto
  • 4-5 crushed pistachios
  • salt and pepper
  • red pepper flakes optional

Instructions

  • Toast sourdough until crisp and slightly browned.
  • Mash avocado on top of toast.
  • With a spoon, gently swirl pesto onto the avocado.
  • Top with crushed pistachios and salt and pepper to taste. (Optional: Red Pepper Flakes)
