- 3 tablespoons almond butter
- 3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- ⅛ teaspoon almond extract optional but adds to that sugar-cookie flavor
- A pinch of salt
- 1 cup super fine almond flour I love Bob's Red Mill
For the Sugar Coating:
- white sugar for rolling (optional)
- rainbow sprinkles for rolling (optional)
In a large bowl add almond butter, maple syrup, vanilla extract, almond extract and a pinch of salt. Whisk until well combined.

Add in your almond flour and stir until combined.
1 cup super fine almond flour
Place your bowl in the freezer for 10 minutes to help it firm up.
Using a small spoon or cookie scoop, begin rolling into uniform balls between the palm of your hand.Optional: Finish off your sugar cookie balls by gently them in some sugar and rainbow sprinkles. You could also consider drizzling with a little white chocolate. Enjoy right away or store in the fridge for up to 7 days for an easy treat.
