No-Bake Healthy Sugar Cookie Bites

These healthier no-bake sugar cookie bites combine the nostalgic sweetness of traditional sugar cookies with wholesome ingredients, offering a guilt-free, energy-boosting treat.

Ingredients

  • 3 tablespoons almond butter
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • teaspoon almond extract optional but adds to that sugar-cookie flavor
  • A pinch of salt
  • 1 cup super fine almond flour I love Bob's Red Mill

For the Sugar Coating:

  • white sugar for rolling (optional)
  • rainbow sprinkles for rolling (optional)

Instructions

  • In a large bowl add almond butter, maple syrup, vanilla extract, almond extract and a pinch of salt. Whisk until well combined.

  • Add in your almond flour and stir until combined.
    1 cup super fine almond flour
  • Place your bowl in the freezer for 10 minutes to help it firm up.
  • Using a small spoon or cookie scoop, begin rolling into uniform balls between the palm of your hand.
    Optional: Finish off your sugar cookie balls by gently them in some sugar and rainbow sprinkles. You could also consider drizzling with a little white chocolate.
  • Enjoy right away or store in the fridge for up to 7 days for an easy treat.
