PB & J Overnight Oats

Ingredients

  • ½ cup old fashioned oats
  • ½ cup non-dairy milk
  • 1 tablespoon Peanut butter plus more for topping
  • Pinch salt
  • ¼ cup frozen or fresh blueberries plus more for topping
  • 1 tablespoon maple syrup
  • 1 tablespoon chia seeds

Instructions

  • In a glass jar or bowl, mix oats with milk, peanut butter, and a pinch of salt.
  • Make your blueberry compote topping: in a small bowl mix frozen blueberries with maple syrup and heat on microwave for ~20 sec. Mix in chia seeds. Pour mix over oats.
  • Cover and let sit for 4 hours or overnight.
  • Top with more blueberries and pb as desired.
