Equipment

Ingredients

  • 1 15 oz can chickpeas drained and rinsed
  • ½ teaspoon baking soda
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • 2 tablespoon high quality tahini
  • 2 tablespoon ice water
  • 1 -2 tablespoon everything but the bagel (EBTB) seasoning for topping

Instructions

  • Begin by softening your chickpeas in a medium size pot. Cover the bottom with water and add in drained and rinsed chickpeas with baking soda.
Simmer your chickpeas for 15 minutes, covered. (Softening your chickpeas is super important to make creamy hummus.)
  • In a food processor, add softened chickpeas, olive oil, minced garlic cloves, tahini, salt, onion powder, and ice water. Process on high for 2-3 minutes until smooth and creamy. You may have to stop it to scrape down the edges 1-2x.
  • Serve your Everything Bagel Hummus in a shallow bowl, smoothing it out with a spoon and topping with Everything Bagel Seasoning and olive oil (if desired). Serve with pita, crackers, veggies, or whatever you like!

Notes

Q& A:
Where can I find Everything But the Bagel Seasoning?
You can find this at Trader Joe's, Amazon, and at some grocery stores. It is a mix of sesame seeds (white and black, poppy seed, dried minced garlic, dried minced onion, and coarse salt.
Why do I need baking soda?
Baking soda is used to soften your chickpeas before you put them in the food processor. You will use ½ teaspoon when cooking your chickpeas in water and it makes a HUGE difference in the texture of your hummus. You cannot taste it in your hummus.  I don't recommend skipping this step if you want the creamiest possible hummus.
I don't have a food processor. What else can I use to blend hummus?
You can use a high speed blender to make hummus but you may have to scrape down the edges multiple times and add a touch extra water to obtain the right texture. A small blender like a nutribullet likely won't create the creamiest hummus.
