Mix up spices and spread on a plate. Cut tofu into three 1.5 inch thickness large pieces using a cup or round cookie cutter to cut out a circle. (I was able to make 3 vegan eggs from one block of tofu. Save your tofu scraps to make a tofu scramble with the leftovers!)
Coat the tofu circles with the spice mixture on a plate. Cook tofu pieces for 6-7 minutes each side in a pan until crispy and slightly browned. You can also cook up the plant-based sausage in the same pan at the same time.
Toast your English muffin until just lightly browned. . Layer vegan cheese on the bottom, then sausage, then the vegan egg. Enjoy! Optional: Cook in toaster oven at 300 F for ~4-5 minutes until cheese is melty.
