chickpeas sun-dried tomatoes vegetable broth tomato pasta spinach onion  garlic fresh basil lemon  coconut milk

Sauté onion and garlic.

Add the chickpeas and tomato paste to the pot. Pour in the vegetable broth. Simmer.

Use immersion blender to blend part of soup. Add coconut milk, sundried tomatoes, and spinach.

What if I don't have an immersion blender?

You can carefully spoon ⅓-1/2 of the soup into a blender. The chickpea soup will be hot so be cautious when doing it with this method.

Can I make this healthier?

For less calories and fat in this chickpea soup, use lite coconut milk and sundried tomatoes NOT in oil.
