unsweetened applesauce almond milk unsweetened, plain ground flaxseeds  granulated sugar brown sugar pure vanilla extract grated zucchini ~ 1 medium zucchini (don't blot) all purpose flour baking powder baking soda salt cinnamon nutmeg peaches

Whisk together wet ingredients.

Add in grated zucchini.

Add dry ingredients and mix.

Add in peaches.

Place in baking bread pan and bake for ~45 minutes.

Let bread cool, slice, and enjoy!

Can I use other types of fruit in this bread?

Yes, you can also try out raspberries, strawberries, diced apples or pears for another fun flavor.

Why is my bread mushy in the middle?

I highly recommend baking for a minimum of 45 minutes. Make sure to insert the toothpick directly in the center to check to any wet batter. If you add the sliced peaches on top make sure to check right next to the peach.
