orzo cucumber pesto feta sundried tomatoes arugula chickpeas parsley lemon salt and pepper

1. Chop up cucumbers and cook orzo.

2. Combine all ingredients in a large bowl.

3. Chill or serve right away!

What can I serve this with?

This dish is great as a side to a veggie burger or wrap. 

How long should I cook orzo?

Follow package instructions but  make sure to cook your orzo al dente. This helps so the pasta salad doesn't get mushy.
