This creamy tomato vegan gnocchi soup is the coziest fall and winter soup to cuddle up with on the couch with a piece of buttered sourdough.

1. Dice onion and cook in a large pot with garlic 2. Add tomatoes, veggie broth, salt, brown sugar, and red pepper flakes. Bring to boil. 3. Use an immersion blender to blend the soup. 4. Add in gnocchi, tomatoes, and coconut milk and bring back to boil. 5. Top with more basil if desired and enjoy!
