    When I made these for my non-sweet-potato-loving husband he was shocked- he loved the crispy texture of the sweet potato and the savory rosemary garlic butter on top (who doesn't love butter?!)     What are smashed sweet potatoes?

    A smashed sweet potato is a type of side dish made by roasting or boiling sweet potatoes until they are tender, and then smashing them with a fork or potato masher. The smashed sweet potatoes are then seasoned and often broiled until they are crispy on the outside and soft on the inside. They are not mashed sweet potatoes, so make sure to be gentle with your fork ;).

    How to make Rosemary Garlic Butter Smashed Sweet Potatoes

    1. Cut your sweet potatoes into ½-1 inch slices and lay on a parchment lined sheet and bake.
    2. While it bakes, make your infused rosemary garlic butter on the stove.
    3. When your potatoes have baked for 25 minutes, use a fork to smash. This will help them get crispier when you broil them next.
    4. Drizzle the rosemary garlic butter on top and sprinkle with salt as desired.
    5. Broil for ~15 minutes until crispy (keep an eye on them so they don't burn!)

    Storage

    • Store the potatoes in the fridge in a container for up to 5 days. Reheat in the oven or a conventional oven at 350F for 5-7 minutes.

    Pro Tips

    Ingredients
      

    • 2 medium sweet potatoes sliced into ½ -1 inch pieces
    • 4 tablespoon vegan butter
    • 2 sprigs rosemary fresh
    • 2 large cloves fresh garlic minced
    • Salt and pepper to taste

    Instructions
     

    Roast Sweet Potatoes

    • Preheat oven to 425F.
    • Slice sweet potatoes and line on a parchment lined baking sheet. Roast for 25 minutes.

    Make Garlic Rosemary Butter

    • Infuse your butter with garlic and rosemary. Begin by melting your butter in a small saucepan over low-medium heat.
    • Add in minced garlic and saute for 1 minute.
    • Add in rosemary sprigs and simmer for 5 minutes.
    • Let infused butter sit for 10 minutes. Gently remove rosemary pieces off main branch using spoon. They should fall off easily.

    Smash and Broil

    • Remove roasted sweet poatoes and gently smash with a fork (so that some of the sweet potato contents oozes out).
    • Drizzle garlic rosemary butter on top.
    • BROIL for 15 minutes until crispy.
    • Allow to cool for at least 5 minutes before sprinkling with salt and pepper. Enjoy!
